- 35 g oats use gluten free if preferred
- 30 g ground almonds
- 30 g dried blueberries or use dried fruit of your choice
- 20 g chopped pitted dates
- 35 g vanilla flavour whey or plant-based protein powder optional
- 25 g coconut oil melted
- 30 ml unsweetened almond milk
Line the base of a 15x15cm oven tin with baking paper.
Place all of the ingredients in a large bowl and mix well until combined. Note: if you aren’t using protein powder, you will only need around 20ml of almond milk.
Transfer the mixture to the tin. Press down and flatten the surface with a spatula.
Refrigerate until firm. Cut into 4 pieces.
Store any leftovers in an airtight container and refrigerate for up to 3 days.
