- 1 tsp olive oil divided
- 2 eggs
- 1 egg white
- 2 shallots finely chopped
- 20 g chorizo finely chopped
- 20 g Cheddar cheese grated, use dairy free if preferred
- sea salt optional
- black pepper to taste
Heat half of the oil in a frying pan over a medium flame. Add the chorizo and shallots and fry for 5 minutes, stirring frequently. Transfer to a plate.
Whisk the eggs, egg white, salt and pepper in a jug until combined.
Place the frying pan back over a medium heat. Add the remaining oil and swirl to coat the base.
Pour in the eggs and cook for 3–4 minutes undisturbed, until the centre begins to firm up.
Distribute the cooked shallots and chorizo over one half of the omelette. Sprinkle with cheese.
Cook for another 4 minutes until nearly set, then fold the omelette in half and leave off-heat to finish cooking for 3–4 minutes.
