Ingredients
- 1 tsp olive oil divided
- 2 eggs
- 1 egg white
- 2 shallots finely chopped
- 20 g chorizo finely chopped
- 20 g Cheddar cheese grated, use dairy free if preferred
- sea salt optional
- black pepper to taste
Instructions
- Heat half of the oil in a frying pan over a medium flame. Add the chorizo and shallots and fry for 5 minutes, stirring frequently. Transfer to a plate.
- Whisk the eggs, egg white, salt and pepper in a jug until combined.
- Place the frying pan back over a medium heat. Add the remaining oil and swirl to coat the base.
- Pour in the eggs and cook for 3–4 minutes undisturbed, until the centre begins to firm up.
- Distribute the cooked shallots and chorizo over one half of the omelette. Sprinkle with cheese.
- Cook for another 4 minutes until nearly set, then fold the omelette in half and leave off-heat to finish cooking for 3–4 minutes.
