- 500 g Boneless Skinless Chicken Breast or Thighs cut into bite-sized pieces
- 1 tbsp Olive Oil
- 2 cups Mixed Vegetables e.g. broccoli, bell peppers, carrots, snap peas
- 2 cloves Garlic minced
- 1 tsp Fresh Ginger grated
- 3 tbsp Honey
- 3 tbsp Low-Sodium Soy Sauce or tamari for gluten-free
- 1 tbsp Rice Vinegar
- 1 tbsp Cornstarch optional, for thickening
- 0.25 cup Water for slurry
- Sesame Seeds to garnish
- Green Onions sliced, to garnish
Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
In same skillet, stir-fry vegetables for 3–4 minutes until tender-crisp. Add garlic and ginger, cook 1 minute more.
In a bowl, whisk honey, soy sauce and rice vinegar. Optional: mix cornstarch with water to create slurry and add to sauce.
Return chicken to skillet. Pour sauce over and stir to coat. Simmer until sauce thickens slightly.
Garnish with sesame seeds and green onions. Serve hot over rice or noodles.
