- 2 lbs Boneless Chuck Roast cut into 1½-inch cubes
- 3 tbsp Olive Oil divided
- 2 tsp Kosher Salt divided
- 0.5 tsp Ground Black Pepper divided
- 1 Yellow Onion diced
- 2 Garlic Cloves minced
- 1 lb Carrots peeled and sliced into ½-inch diagonals
- 1 Russet Potato peeled and cut into ¾-inch chunks
- 1 can Beef Broth 14.5 oz, low-sodium
- 1 can Tomato Sauce 8 oz, no salt added
- 1 Bay Leaf
- 1 tbsp Cornstarch for slurry
- 1 tbsp Water for slurry
- 0.25 cup Frozen Peas
- Fresh Parsley chopped, for garnish
Cut chuck roast into 1½-inch cubes, removing tough fat or gristle.
Set Instant Pot to SAUTE. Heat 1 tbsp oil and brown half the beef with 1 tsp salt and ¼ tsp pepper for 4–5 minutes per side. Transfer to plate and repeat with remaining beef.
Dice onion, mince garlic, and slice carrots. Scrub and peel potato, then cut into chunks.
Add remaining 1 tbsp oil and onion to pot. Cook until softened and browned, about 6 minutes.
Add garlic and cook for 30 seconds until fragrant.
Pour in beef broth and scrape bottom of pot to deglaze. Stir in carrots, potatoes, browned beef and juices. Pour tomato sauce on top without stirring. Add bay leaf.
Seal lid and cook on HIGH pressure for 35 minutes. Let pressure release naturally for 10 minutes, then quick release.
Whisk cornstarch and water to make slurry. Stir into stew and simmer on SAUTE until thickened.
Stir in peas and warm through. Discard bay leaf. Garnish with parsley and serve hot.
