- 100 g mixed lettuce leaves a handful
- 50 g cucumber chopped
- 80 g red bell-pepper chopped
- 5 cherry tomatoes halved
- 30 g edamame beans shelled
- 60 g smoked salmon
- 50 g avocado chopped
- 5 g pine nuts
- 5 g pumpkin seeds
- 0.5 tbsp extra virgin olive oil
- 0.5 tbsp white wine vinegar
- 0.5 tsp dried oregano
- 0.25 tsp ground black pepper
- 0.25 tsp sea salt
In a small jug, mix olive oil, white wine vinegar, oregano, pepper and salt to make the dressing.
Add lettuce, cucumber, bell-pepper, tomatoes, edamame, avocado and smoked salmon to a bowl.
Drizzle the dressing over the salad. Toss gently.
Top with pine nuts and pumpkin seeds. Serve immediately.
