- 3 cups Riced Cauliflower from ~1¼ lb or ½ head
- 1 Egg lightly beaten
- 0.75 cup Sharp Cheddar Cheese shredded
- 0.25 cup Grated Parmesan
- 0.5 tsp Kosher Salt
- 0.25 tsp Black Pepper
- 0.25 tsp Garlic Powder
- 0.25 tsp Onion Powder
- 0.25 tsp Smoked Paprika or ⅛ tsp cayenne
- Non-stick Cooking Spray
Place racks in the center and upper third of your oven. Preheat the oven to 400°F (200°C). Generously coat a rimmed baking sheet with nonstick spray or line with parchment paper.
Place the cauliflower rice in a microwave-safe bowl. Microwave on high, uncovered, for 2 minutes.
Spread the cauliflower onto a clean, dry kitchen towel and let cool for 5 minutes. Bring the sides of the towel up and around the cauliflower to make a purse and squeeze out as much moisture as possible.
In a large mixing bowl, beat the egg with a fork. Stir in the cheddar, Parmesan, salt, pepper, garlic powder, onion powder, and smoked paprika.
Add the cauliflower and mix to combine thoroughly.
Divide the mixture into 8 equal portions. Shape into 1/2-inch thick patties and arrange evenly on the baking sheet.
Bake on the center rack for 15 minutes, rotating the pan halfway through.
Turn the broiler to low. Transfer pan to the upper rack and broil until tops are crispy, about 5 minutes. Watch closely to prevent burning.
Let cool for 5 minutes on the baking sheet before serving.
