- 1 Avocado halved and pitted
- 0.25 cup Cherry Tomatoes diced
- 2 tbsp Feta Cheese crumbled
- 1 tsp Olive Oil
- Salt and Pepper to taste
- Fresh Basil or Parsley optional garnish
Place avocado halves on a plate and scoop slightly to deepen the cavity.
Mix diced tomatoes and crumbled feta in a bowl. Drizzle with olive oil and season.
Spoon mixture into avocado halves. Garnish with herbs and serve immediately.
