Apple Pie Overnight Oats
Cozy, spiced and naturally sweet—these overnight oats layer cinnamon apples with creamy oats and a hint of vanilla. With chia seeds and optional protein powder, it’s a wholesome breakfast that tastes like dessert.

- 0.5 medium sweet apple chopped
- 0.5 tsp ground cinnamon
- 1 tsp maple syrup
- 1 pinch sea salt
- 0.5 cup unsweetened almond milk
- 1 tbsp chia seeds
- 1 tbsp almond butter
- 0.5 tsp vanilla extract
- 0.5 cup rolled oats use gluten free if preferred
- 20 g vanilla flavour protein powder optional
Place the chopped apple, cinnamon, maple syrup and salt in a small saucepan. Stir to coat the apples evenly.
Cover and cook over low heat for 10 minutes, stirring occasionally, until the apples are soft. Remove lid and cook for 2–3 more minutes to reduce liquid. Set aside.
In a bowl or jar, mix the almond milk, chia seeds, almond butter, vanilla extract and protein powder (if using). Stir until smooth.
Add the oats and stir well to combine.
Layer half the cooked apples into the bottom of a jar or container. Add the oat mixture, then top with remaining apples.
Cover and refrigerate for at least 2 hours or overnight.
Serve chilled or at room temperature. Store leftovers in the fridge for up to 3 days.
