Ingredients
- 100 g Cooked Chicken Breast shredded or diced
- 0.5 cup Cooked Quinoa
- 1 cup Roasted Pumpkin cubed
- 0.25 Avocado sliced or diced
- 1 tbsp Fresh Coriander chopped
- 1 tsp Olive Oil
- 0.25 Lime juice
- Salt and Pepper to taste
Instructions
- Cook quinoa according to package instructions and let cool slightly.
- Roast pumpkin cubes with olive oil, salt and pepper at 200°C (400°F) for 20–25 minutes until tender.
- Layer quinoa, roasted pumpkin and chicken in a bowl. Top with avocado and coriander.
- Drizzle with olive oil and lime juice. Season to taste and serve.
