Chicken & Pumpkin Quinoa

Ingredients
  

  • 100 g Cooked Chicken Breast shredded or diced
  • 0.5 cup Cooked Quinoa
  • 1 cup Roasted Pumpkin cubed
  • 0.25 Avocado sliced or diced
  • 1 tbsp Fresh Coriander chopped
  • 1 tsp Olive Oil
  • 0.25 Lime juice
  • Salt and Pepper to taste

Instructions
 

  • Cook quinoa according to package instructions and let cool slightly.
  • Roast pumpkin cubes with olive oil, salt and pepper at 200°C (400°F) for 20–25 minutes until tender.
  • Layer quinoa, roasted pumpkin and chicken in a bowl. Top with avocado and coriander.
  • Drizzle with olive oil and lime juice. Season to taste and serve.
