
Tasty Honey Chicken Stir Fry

Ingredients
- 500 g Boneless Skinless Chicken Breast or Thighs cut into bite-sized pieces
- 1 tbsp Olive Oil
- 2 cups Mixed Vegetables e.g. broccoli, bell peppers, carrots, snap peas
- 2 cloves Garlic minced
- 1 tsp Fresh Ginger grated
- 3 tbsp Honey
- 3 tbsp Low-Sodium Soy Sauce or tamari for gluten-free
- 1 tbsp Rice Vinegar
- 1 tbsp Cornstarch optional, for thickening
- 0.25 cup Water for slurry
- Sesame Seeds to garnish
- Green Onions sliced, to garnish
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
- In same skillet, stir-fry vegetables for 3–4 minutes until tender-crisp. Add garlic and ginger, cook 1 minute more.
- In a bowl, whisk honey, soy sauce and rice vinegar. Optional: mix cornstarch with water to create slurry and add to sauce.
- Return chicken to skillet. Pour sauce over and stir to coat. Simmer until sauce thickens slightly.
- Garnish with sesame seeds and green onions. Serve hot over rice or noodles.
