Apple Pie Overnight Oats

Cozy, spiced and naturally sweet—these overnight oats layer cinnamon apples with creamy oats and a hint of vanilla. With chia seeds and optional protein powder, it’s a wholesome breakfast that tastes like dessert.

Ingredients
  

  • 0.5 medium sweet apple chopped
  • 0.5 tsp ground cinnamon
  • 1 tsp maple syrup
  • 1 pinch sea salt
  • 0.5 cup unsweetened almond milk
  • 1 tbsp chia seeds
  • 1 tbsp almond butter
  • 0.5 tsp vanilla extract
  • 0.5 cup rolled oats use gluten free if preferred
  • 20 g vanilla flavour protein powder optional

Instructions
 

  • Place the chopped apple, cinnamon, maple syrup and salt in a small saucepan. Stir to coat the apples evenly.
  • Cover and cook over low heat for 10 minutes, stirring occasionally, until the apples are soft. Remove lid and cook for 2–3 more minutes to reduce liquid. Set aside.
  • In a bowl or jar, mix the almond milk, chia seeds, almond butter, vanilla extract and protein powder (if using). Stir until smooth.
  • Add the oats and stir well to combine.
  • Layer half the cooked apples into the bottom of a jar or container. Add the oat mixture, then top with remaining apples.
  • Cover and refrigerate for at least 2 hours or overnight.
  • Serve chilled or at room temperature. Store leftovers in the fridge for up to 3 days.
