Crispy Fishcakes with Lime

Crispy Fishcakes with Lime offer flaky white fish combined with mashed potato, spring onions, herbs, and a hint of chilli, shaped and pan-fried to golden perfection. Each bite is lifted with a splash of lime, adding brightness and balance to the savoury richness. Ingredients
  

  • 80 g panko breadcrumbs
  • 0.25 tsp ground black pepper
  • 0.25 tsp sea salt
  • 2 tbsps mayonnaise
  • 2 tbsps Thai sweet chilli sauce
  • 3 tbsps fresh coriander finely chopped
  • 1 egg
  • 300 g white fish e.g. cod or haddock, chopped
  • 2 tbsps olive oil spray
  • lime wedges to serve

Instructions
 

  • In a bowl, combine 30g panko, pepper, salt, mayonnaise, chilli sauce, coriander, egg and chopped fish. Mix well.
  • Place remaining panko on a plate. Shape mixture into 8 patties and coat in breadcrumbs.
  • Spray fishcakes with olive oil on both sides. Preheat air fryer or oven to 200°C/400°F.
  • Place fishcakes in air fryer basket or on a foil-lined tray. Cook for around 10 minutes or until golden and crispy.
  • Serve with lime wedges.
