- 40 g butter
- 2 lemons juiced
- 2 tbsps honey
- 4 rosemary leaves only
- 1 garlic clove finely chopped
- 0.5 tsp sea salt
- 0.5 tsp ground black pepper
- 1.2 kg chicken thighs bone-in
- 1 lemon cut into wedges
Instructions
- Preheat oven to 200°C/400°F. Place chicken in a roasting dish in a single layer.
- In a saucepan, melt butter over low heat. Stir in lemon juice, honey, rosemary, garlic, salt and pepper.
- Pour lemon butter over chicken. Arrange lemon wedges around the dish.
